Right before I left for Paris on the very first day of fall I decided to ring in my favorite season I would throw a Happy First Day of Fall party at our apartment! It was so much fun and also super yummy because I made some recipes I’ve been DYING to try and I’m so happy to say they all passed the test! So please see below for the delicious sparkling spiked cider drink I made along with 4 other yummy AND SUPER EASY things you can make! Honestly all of this blew my mind by how easy it was! Enjoy and happy fall!!

- 1 block cream cheese softened to room temperature, 8oz.
- 1 8 oz tub vegetable cream cheese
- 2 tbsp Hidden Valley Ranch Spicy Ranch mix
- 3 green onions sliced
- 1 red pepper finely diced (save the stem)
- 2 cups shredded sharp cheddar cheese divided use

Using an electric or stand mixer, combine both cream cheeses.

Then stir in 2 tablespoons of Hidden Valley Ranch Spicy Ranch mix, green onion, red pepper and one cup shredded cheddar cheese.

Spread out a large sheet of Glad ClingWrap.

Sprinkle about a 1/4 cup of the shredded cheddar cheese onto the plastic wrap.

Then top with cheese ball mixture.

Take the rest of the shredded cheddar cheese and sprinkle it onto the tops and sides of the cheese ball and wrap it up well with cling wrap.

Two layers of cling wrap work best. It needs to be well-wrapped and wrapped tightly. Now, time to wrap it up with four large and wide rubber bands.

We don’t want any cheese ball mix squeezing out while we’re putting on the rubber bands. I had to double wrap each rubber band to get those long indentations we’re looking for to make the pumpkin shape.

Place cheese ball into the fridge for a minimum of two hours (overnight is best.) Not only do the flavors get better as it sits, but as the mixture cools, it will help it to form that pumpkin shape.

When ready, cut off the rubber bands and carefully remove the cling wrap.

Then add on the red pepper stem to the top. Just gently push it in there.

Serve with your favorite buttery crackers.
This recipe was from The Country Cook and honestly turned out waaaay better than I expected! Everyone was dying over it.
PUMPKIN BOWL FOR VEGGIES AND DIP
This ones super easy, but something I never thought of before! For most parties you usually want some of your typical veggies and ranch dip, but instead of the usual bowl in the middle carve out a pumpkin! I just hollowed him out and stuck a mini mason jar inside to fill with dip! So easy and adds to the festiveness!
This taste just like the popcorn balls you had as a kid, but cuter and fresh instead of stale! I honestly used a bag of popcorn to make this, but fresh popcorn would of been extra delish! Everyone ate all of this so I’d say it was a hit!
- 12 Cups of Popped Popcorn
- 3.5 tbsp. Butter (Sweet Cream, Salted)
- 3 1/2 cups Mini Marshmallows
- Candy Corn Sprinkles or Orange Jimmies and Yellow Jimmies
- Regular M&M’s – Yellow and Orange

CARAMEL APPLE CREAM CHEESE SPREAD
This literally involves taking out cream cheese, toffee, and caramel in the easiest way EVER and is SO yummy! Plus it’s a perfect way to get rid of all of the apples you may have from apple picking, but it’s also especially good with pretzels because of the sweet and salty combo!
- 8 ounces cream cheese
- caramel sauce (homemade or store-bought)
- toffee bits
- sliced apples, pears, pretzels for serving
- Place cream cheese on a serving dish. Pour as much caramel sauce as you want evenly over cream cheese. Sprinkle with a generous helping of toffee bits.
- Serve with sliced apples, pears, or pretzels.

I put this into the big mason jar to serve lots of guests with no hassle! So easy, but not too sweet! It was perfect and everyone loved it!
