MY FAVORITE RECIPES: EASY TACO SOUP

I made this super easy and yummy taco soup yesterday and sharing the recipe here! I got this from I Heart Vegetables and the recipe is linked here!

INGREDIENTS
-2, 15oz cans of diced tomatoes
-1, 15oz can of black beans
-1, 15oz can of pinto beans
-2 cups of vegetable broth
-1 cup water
-1 cup corn
-1 pack of McCormick Taco Seasoning

Toppings (optional)
-crumbed feta cheese (what I do!)
-shredded cheddar cheese
-sliced avocado (what I do!)
-hot sauce
-dollop of sour cream or plain Greek yogurt
-chopped cilantro (what I do!)

DIRECTIONS

Step 1: Add diced tomatoes to a large pot and cook over medium heat

Step 2: Drain and rinse black beans and pinto beans and then add them to the pot!

Step 3: Next add the vegetable broth and water and stir to mix.

Step 4: Add corn and 1 pack of McCormick’s Taco Seasoning

Step 5: Cook over medium heat for 15 minutes

Step 6: Meanwhile prepare your toppings! Chop the avocado, and get any additional items you want to addd on top!

Step 7: Pour and serve!

 

Literally SO easy and so good! I love making a big batch for a week of lunches for Danny and I!

So many memories with our @bugaboousa stroller 😭🫶🏻 honestly I got so emotional looking at these and seeing how much Ever has grown. The last one is from our very first walk just a week after she was born and 😭😭😭
