My Favorite Recipes: Healthy-ish Banana Bread

While I LOVE my mamaw’s Banana Bread Recipe (you can find it here) the older I get the more I can’t handle a lot of sugar and it just makes me mentally feel meh. So since I’ve been baking at home a TON I wanted to make a healthier option and I LOVED this recipe that I found! It’s only sweetened with maple syrup and/or honey. It was super easy and so so yum! This one is from Kristine’s Kitchen!

HEALTHY-ISH BANANA BREAD

Ingredients

  • 5 tablespoons unsalted butter or coconut oil
  • 1/2 cup honey or pure maple syrup (I used 1/4 cup of both!) 
  • 1 3/4 cup mashed ripe banana about 3 1/2 large or 5 medium bananas
  • 2 eggs
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 2 cups white whole wheat flour (250 grams), or regular whole wheat or all-purpose flour

Instructions

  • Preheat oven to 350 degrees F. Spray a 9×5-inch loaf pan with cooking spray. Lay a sheet of parchment paper across the bottom and up the sides of the pan (see photo’s on Kristine’s blog.
  • Melt the butter in a large glass bowl in the microwave (or melt butter in a pot on the stove and transfer to a large mixing bowl).
  • Add the honey and mashed banana to the bowl and whisk to combine. Whisk in the eggs.
  • Add the baking soda, salt, cinnamon and vanilla to the bowl. Whisk until very well combined.
  • Add the flour and mix with a rubber spatula until just combined. You want all of the flour to be incorporated into the batter, but try not to over-mix.
  • Transfer the batter to the prepared baking pan. Bake for 55-65 minutes, until a toothpick inserted into the center of the loaf comes out clean. Check on the banana bread after 35 minutes and loosely cover with foil as needed to prevent the top from over-browning.
  • Let the bread cool in the pan for 10 minutes and then transfer it to a wire rack to finish cooling.

Honestly this post just goes out to Danny. In my m Honestly this post just goes out to Danny. In my mind I had some sort of expectation of how he would be at birth or with our daughter and wow he is just beyond anything I ever could of imagined. He kept telling me how proud he was of me while I was pushing, giving me so many words of encouragement that just fueled me through. He listens to the baby blues I often get as the sun sets and does the 5 minute journal with me to help reflect on all the days positive moments. He reminds me it’s normal and okay to cry during this time. He thanks me for growing our perfect little girl. He just makes me feel seen at this time where my emotions are all over the place. While this time becoming a mom has been MAGICAL it’s also a lot of emotions of what my new future looks like, realizing what will never be the same about my old life. He listens to it all with no judgement ❤️ I even texted his mom to say thank you for creating and raising such a wonderful son ❤️ basically all this to say- I love Danny even more and I didn’t think that was physically possible 🥹 my heart has truly grown 10 more sizes the past few days
