I’m now back in NYC and it feels SO good to be home! So with that I wanted to get back into the swing of blog posts and my regular posts! So since it’s January and a lot of resolutions are to cook more at home, why not also bake some more at home! The best part of this recipe is it makes enough to give a loaf away to someone annnd sharing is caring! So while you’re staying cozy inside whip up some of my family’s banana bread recipe!
Mamaw’s Banana Nut Bread
2 sticks of butter
2 cups of sugar
4 eggs
6 ripe bananas
1 teaspoon of baking soda
4 cups of flour
1 1/2 cups of chopped pecans (I’ve used walnuts before as well)
Preheat over to 325. Cream butter and sugar in mixing bowl using electric mixer. Add eggs. Cream well and add bananas. Mix well. Add soda, mix well, scraping sides of bowl. Add 3 cups of flour. Mix remaining cup of flour with pecans and then add the pecan-flour mixture to the mixing bowl. Pour into a greased and floured pan (I use loaf pans). Bake at 325 for 75 minutes or until done. Take out and let cool for 3 minutes. Flip out on pan onto wire cooking rack.
