My Favorite Recipes: Tomato soup

Over thee weekend we had friends over for a big pot of tomato soup and I wanted to share the recipe because it was so easy and yum!! This recipe is actually from Brandi and Brandon’s aunt Jessica! So we are naming it after her!

Aunt Jessica’s Tomato Soup 

1 can of each:
Tomato sauce
Tomato purée
Rotel tomatoes
Italian tomatoes
1 box of vegetable soup
1 clove of garlic (chop)
1 bunch of fresh basil (chop)
1 onion (fine chop)
1 cup of cream Sherry (totally optional and I didn’t use)
1 stick of butter
12 or so halved grape tomatoes
1 medium container of heavy whipping cream
Black pepper to taste
Shaved Parmesan
Turn on pressure cooker (soup setting 15 minutes)
Sauté onion, garlic and butter until transparent.
Add Sherry. Sauté a couple minutes.
Add all other ingredients.
Reset pressure cooker (soup setting 15 minutes)
Close up and wait til done.
Top with shaved Parmesan cheese

I also feel you could make this just on your stove top or in a crock pot.. just would need to simmer longer. But it was so easy in a pressure cooker if you have one!!

So yummy! Enjoy!

So many memories with our @bugaboousa stroller 😭🫶🏻 honestly I got so emotional looking at these and seeing how much Ever has grown. The last one is from our very first walk just a week after she was born and 😭😭😭
