Finally I am so excited to share another new launch to my blog! As most of you know from my Instagram stories, I love to cook. Am I the best at it and make crazy things? Nope and nope. But I enjoy cooking and creating healthy, fairly simple things and get so many questions about the food I make that I decided I will start sharing my favorite ones in blog posts! Will they be insane gourmet, 2 hour long recipes? The answer again is nope because I don’t have time for that and I’m sure a lot of you don’t too! Basically I will either share original recipes or share ones I’ve tried by different chefs and foodies and share my thoughts on it! So to first kick this off we have a super simple recipe for Israeli salad that SO many of you had asked me about! It’s so yummy with feta and falafel and/or veggie sausage! Or even on its own, whatever you’d like! So scroll down for the recipe and I hope you enjoy!
This recipe is originally from the amazing Tori Avey and it’s so delish!
Ingredients
- 1 lb Persian cucumbers, diced
- 1 lb fresh ripe tomatoes, seeded and diced
- 1/3 cup minced onion (optional)
- 1/2 cup minced fresh parsley
- 3 tbsp extra virgin olive oil
- 3 tbsp fresh lemon juice
- Salt to taste (I use about 1/2 tsp)
And you just stir it all together! I don’t love onions so I didn’t add them, but they can be great too in it! So easy and so yummy and colorful!
